Classic French apple tart

An apple a day keeps the doctor away... I hope it counts for the apple pastry as well, because I just love the smell of an apple pie from my oven! Oh well, I mentioned it already here.
This time I would love to share with you the recipe of a classic French apple tart, with crispy dough covered with a vanilla applesauce and topped with beautifully arranged apple slices.
So good! It will take some time to arrange apple slices on top, but it's definitely worth it! As the result you will get a gorgeous tart that is fantastic for any occasion and it looks like it came from a bakery!

Apple pie with caramel

Nowadays you can always find apples in a supermarket all year round, but for me apples mean autumn. Do you love apples? I do! And especially I love the smell of an apple pie from my oven. There is something magical about this smell, it gives me such a cozy and relaxing feeling, maybe because it reminds me about my childhood and about all delicious pies that my mom baked for me. Nothing can compare to that!
These days I have to do all baking by myself, but I don't mind, really... I don't! Because I know... I will get a reward: a slice of my perfect apple pie, served with a scoop of vanilla ice cream and caramel sauce on top.

Strawberry Pistachio tart

I love tarts and especially I love tarts with fresh berries. They always look and taste amazing, and they make a perfect summer dessert.

I baked this Strawberry Pistachio tart in July, before our 3-weeks trip to Russia (you can see more details of this trip on my Instagram feed), unfortunately I didn't have time to share this recipe back then, but I hope you still will be able to find nice local strawberries till the end of this summer. Because this tart is definitely worth all the efforts and I'm sure, you will love it, as I do.

Without any doubts, watermelons and strawberries are one of the best seasonal summer treats. Nothing is so refreshing on a hot summer day as a cold watermelon straight from a fridge and nothing is so sweet and delicious as summer strawberries! And in this cocktail these two are making a wonderful, sweet and refreshing combo. It's totally up to you to make this drink boozy or not, the rum can be easily omitted. It will be delicious both ways!

CHERRY MASCARPONE AND CHOCOLATE BERRY MINI TARTS

I love tarts with fresh berries, they are easy to bake and look absolutely fantastic! The most popular recipe on my blog so far is this wonderful tart with mascarpone and berries. And no wonder: crispy crust, rich cream and berries combine in a treat that's twice as delicious as the sum of its parts!
This time I decided to bake mini tarts, mini everything is better, don't you think? They look so cute, plus you can easily make two different tastes to keep everybody happy. With chocolate ganache, berries and fruits for girls, mascarpone cream with cherries for boys or another way around, it doesn't matter.
Everybody would love them, trust me.

STRAWBERRY RHUBARB GALETTE

Strawberry is such a sexy fruit! I love strawberry everything: pies, tarts, galettes and even salads (you can find the recipe of one of my favorite salads with strawberry here).
So when it's a strawberry season, I usually bake a lot of strawberry goodies, and as strawberry goes so well with rhubarb, this strawberry rhubarb galette is one of my favorite recipes for this time of a year.
A galette is basically like a pie, but in a more rustic form: you fold the edges of galette in toward the center and bake it on a regular baking sheet (no baking pan needed). Easy-peasy! Give it a try and I'm sure you will love it!

STRAWBERRY MOJITO POPSICLES

Popsicles are always a good idea, right? Especially these beautiful and delicious Strawberry Mojito Popsicles. I made mine with addition of rum, so they have a real "mojito" taste, but if you want to made them non-alcoholic, the rum can be easily omitted.

INGREDIENTS:

For 8 popsicles:
250g strawberries
1/2 cup fresh mint leaves
2 tbsp rum, optional
3 tbsp honey or maple syrup
350g Greek yogurt
1/2 lime (zest & juice)

Special equipment:
Popsicle mold like this.

DIRECTIONS:
1. In a blender combine strawberries, mint, 1tbsp honey and 1tbsp rum (if using), blend until the mixture becomes smooth. Set aside.
2. Mix yogurt,  zest and juice of lime, 2tbsp honey and 1tbsp rum (if using). Taste. If you want it sweeter, add a little bit more honey.
3. Spoon alternate layers of yogurt and strawberry mojito mixtures into each mold until they are filled. Insert popsicle sticks to the molds and freeze until solid, about 4-6 hours or overnight.
4. To un-mold the popsicles, hold the mold in a warm water (don't let the water go over the top edge) for about 10-15 seconds.

CHOCOLATE DIPPED ALMOND BUTTER COOKIES WITH FLEUR DE SEL & CACAO NIBS

I wrote already once that I'm a bad blogger as I don't post a lot...  Unfortunately I don't have enough time for my blog (especially recently, as I started studying at the university), but I really would like to post regularly!
May be you can advice me something? If you are not a full time blogger, how do you manage it? Any secrets?:-) Oh well... Hope I will find a balance and will be able to share new recipes with you really soon! Stay tuned...
These cookies I baked and shot in January... And it's April already... Time flies! Anyways, it's never too late to share a recipe of delicious cookies, right?! And these cookies are really good, trust me!
The chocolate glaze with fleur de sel & cacao nibs make them fancier, these are not simple cookies anymore... You can bake them for a friend as a present, or just keep them only for yourself and enjoy every bite! Your choice:-)

LIMBURG CHERRY PIE OR LIMBURGSE KERSENVLAAI

I'm not a big fan of traditional Dutch cuisine, but this pie is definitely a keeper! Ask any Dutch person to name the most famous dish from Limburg (the province, located in the southeastern part of the country) and they will for sure answer "vlaai".
Vlaai, also known as Limburgse Vlaai, is a pie consisting of a pastry and filling. It looks a lot like a usual lattice crust pie or Linze Torte, but the main difference is that a pie or torte are made from a shortcrust dough, whereas vlaai is made from a yeast dough. This gives the pastry a totally different consistency and taste.
For the filling you can use different varieties of fruit such as cherries, apricots, plums, strawberries, etc.
I baked mine with cherries and it was delicious!

LEMON MERINGUE TART

This Lemon Meringue tart will become one of your favorites for sure. The crunchy crust, the acid note of lemon cream and the sweetness of the meringue combined in a perfect dessert. It will take some time to bake, but it's definitely worth it!

BANANA PANCAKES

Couple months ago I got an e-mail from a Dutch magazine "BLOGazine" with a suggestion to write an article with a recipe of banana pancakes. And I decided... why not!
This magazine is about Dutch bloggers and you can find there a lot interesting information about fashion, beauty-products and delicious recipes of course. The second edition is now available in shops, but you can also find some additional information online here.

So here we go... Let's make some banana pancakes!
Btw, it's a wonderful idea to serve these pancakes for Valentine's Day breakfast! Easy to make, but nobody will be able to resist!

RUSSIAN STYLE CHOUX BUNS WITH TVOROG CREAM

Long time no posting... But I've promised to some of my followers on Instagram recently to share the recipe of these choux buns... So here it is!
These choux buns are really popular in Russia. And they are on my list of favorite desserts... Crispy and firm on the outside, while the inside is soft and moist. Delicious treat which is really easy to cook. And if you can't buy tvorog to make a cream, you can always change it to mascarpone.

THE BEST BANANA BREAD AND BUTTER CARAMEL SPREAD

I was looking for a recipe of the best banana bread for a really long time... I tried different versions and  this one is the best for me. Looks like everyone has their own idea of banana bread perfection, but if you like chocolate and nuts, I'm sure you will love my recipe!

In my opinion, the best banana bread is full of banana flavour, not too sweet, not too moist, a little bit spicy and  has a lot of nuts and chocolate inside! So here we go... Let's bake the best banana bread!

MANGO-PASSIONFRUIT LOAF CAKE WITH CANDIED CLEMENTINE SLICES

Oh well... Today I would like to share with you a mango-passionfruit loaf cake with candied clementine slices. This cake is a twin of this fancy cake with orange crème brûlée and mango-paasionfruit meringue buttercream. Yes, they are twins:-) The same ingredients but totally different appearance. Do you remember the movie with Danny DeVito and Arnold Schwarzenegger? That kind of twins:-)
Anyway sometimes you just would like to bake something easy and not time-consuming, yet delicious.  And this loaf cake is exactly what you need in this case! This cake has a light, soft and moist sponge with sweet mango pieces, a delicious glaze and on top of this it's perfectly decorated with candied clementine slices (you can skip the clementine slices if you don't have enough time, but I like how the cake looks with them. So festive!).
It's definitely a winter cake. And you can bake it for Christmas, New Year Eve or for any other occasion during winter months.

INGREDIENTS:
270g flour, sifted, plus extra to dust the pan
2 tsp baking powder, sifted
pinch of salt
100g unsalted butter, softened, plus extra to grease the pan
200g caster sugar
2 large egg
80 ml orange juice
juice of 1 passion fruit (without seeds)
1tbsp Cointreau (or another orange-flavoured liqueur)
1 small mango, diced
For candied clementine slices:
2-3 (bio)clementines
240ml water
350g sugar
For icing:
1-2tbsp cream or milk
1tbsp passion fruit juice (without seeds)
150g icing sugar, sifted

DIRECTIONS:
1. Preheat the oven to 180˚C (360˚F). Grease and flour a 21x11x6cm, 1.5 liter capacity loaf pan.
2. With an electric mixer beat the butter and sugar until fluffy and creamy. Add the eggs, Cointreau, orange and passion fruit juice and combine on low speed.
3. In a separate bowl, mix together flour, salt and baking powder. With the mixer on low speed, gradually add the flour mixture to the butter mixture, until well combined.
4. Pour a half of the cake butter into the prepared pan, sprinkle with mango pieces and pour the rest of the butter on top. Bake for about 45-50 minutes or until a toothpick inserted into the center comes out clean.
5. Remove from the oven and let it cool in the pan. Once the cake is cooled, remove from the pan and transfer it to a wire rack.
6. Make the icing by combining the passion fruit juice, cream and icing sugar until smooth (if necessary add more cream, until you get the right consistency).  Pour over the cooled cake and if desired, decorate with candied clementine slices.

To make candied clementine slices:
1. Cut the clementines into thin slices in cross-section and discard the ends.
2. In a saucepan combine the sugar and water and bring to boil. Add the clementine slices, reduce heat to simmer. Simmer for about 30 minutes, stirring occasionally, then remove from the heat and cool to room temperature.
3. Preheat the oven to 100˚C (210˚F). Using a fork, transfer the slices to a baking tray lined with baking paper and bake about 20 minutes or longer if you want them chewier and more caramelized.
Let them cool before decorating the cake.
Note: If not needed immediately, store in an airtight container up to 6 weeks.

TART WITH FRESH BERRIES



I made this tart for a couple of friends and it was a HUGE SUCCES! So if you don't have a lot of time, but would like to bake something really delicious and fabulous looking, this tart is for you.
I will definitly repeat it again. Crispy crust, rich cream and berries combine in a treat that's twice as delectable as the sum of its parts!

ORANGE WAFFLES WITH GREEK YOGURT AND BERRY COMPOTE

If you follow me on Instagram, you already know that we usually have waffles or pancakes for our weekend breakfasts. And today I want to share with you one of my favourite waffle recipe. They are not that thick as Belgian waffles, yet delicious. If you like thin, light and slightly crispy waffles, this recipe is exactly what you need.

INGREDIENTS:

For 4-5 waffles:
100g all-purpose flour
20g almond flour
1/2tsp baking powder
zest from 1/2 orange
1tbsp sugar
pinch of salt
50g unsalted butter, melted and cooled to room temperature
1 egg
200ml almond milk
50ml orange juice

For berry compote:
250g frozen berry mix
2tbsp water
100g sugar

For serving:
Greek yogurt
Icing sugar

Special equipment:
Waffle iron like this.

DIRECTIONS:
1. For the topping: mix frozen berries with sugar and water in a small saucepan. Cook over a medium heat for about 15 minutes stirring occasionally. Leave to cool.
2. Mix all-purpose and almond flour, baking powder, orange zest, sugar and salt in a bowl (dry mixture).
3. In another bowl mix almond milk, orange juice, egg and butter till well combined (wet mixture).
4. Stirring continiously pour the wet mixture to the dry mixture. Stir until smooth.
5. Let the batter rest about 20 minutes at room temperature.
6. Heat the waffle iron and cook waffles according to the manufacture's instruction.

Serve with a big dollop of Greek yogurt and berry compote, dust with icing sugar.
