Strawberry Watermelon Mango Popsicles

Popsicles are great for hot summer days, right? Especially these colorful and easy to make Strawberry Watermelon Mango Popsicles. They will literally take 15 minutes to make: cut fruits, blend, mold, and freeze! Too bad that you will have to wait for them to freeze... But you can make them a day before and enjoy them next morning already. Hope you will like them:) If you have any questions, please, let me know!

Strawberry Pistachio tart

I love tarts and especially I love tarts with fresh berries. They always look and taste amazing, and they make a perfect summer dessert.

I baked this Strawberry Pistachio tart in July, before our 3-weeks trip to Russia (you can see more details of this trip on my Instagram feed), unfortunately I didn't have time to share this recipe back then, but I hope you still will be able to find nice local strawberries till the end of this summer. Because this tart is definitely worth all the efforts and I'm sure, you will love it, as I do.

CHERRY MASCARPONE AND CHOCOLATE BERRY MINI TARTS

I love tarts with fresh berries, they are easy to bake and look absolutely fantastic! The most popular recipe on my blog so far is this wonderful tart with mascarpone and berries. And no wonder: crispy crust, rich cream and berries combine in a treat that's twice as delicious as the sum of its parts!
This time I decided to bake mini tarts, mini everything is better, don't you think? They look so cute, plus you can easily make two different tastes to keep everybody happy. With chocolate ganache, berries and fruits for girls, mascarpone cream with cherries for boys or another way around, it doesn't matter.

STRAWBERRY MOJITO POPSICLES

Popsicles are always a good idea, right? Especially these beautiful and delicious Strawberry Mojito Popsicles. I made mine with addition of rum, so they have a real "mojito" taste, but if you want to made them non-alcoholic, the rum can be easily omitted.

INGREDIENTS:

For 8 popsicles:
250g strawberries
1/2 cup fresh mint leaves
2 tbsp rum, optional
3 tbsp honey or maple syrup
350g Greek yogurt
1/2 lime (zest & juice)

Special equipment:
Popsicle mold like this.

DIRECTIONS:
1. In a blender combine strawberries, mint, 1tbsp honey and 1tbsp rum (if using), blend until the mixture becomes smooth. Set aside.
2. Mix yogurt,  zest and juice of lime, 2tbsp honey and 1tbsp rum (if using). Taste. If you want it sweeter, add a little bit more honey.
3. Spoon alternate layers of yogurt and strawberry mojito mixtures into each mold until they are filled. Insert popsicle sticks to the molds and freeze until solid, about 4-6 hours or overnight.
4. To un-mold the popsicles, hold the mold in a warm water (don't let the water go over the top edge) for about 10-15 seconds.

RUSSIAN STYLE CHOUX BUNS WITH TVOROG CREAM

Long time no posting... But I've promised to some of my followers on Instagram recently to share the recipe of these choux buns... So here it is!
These choux buns are really popular in Russia. And they are on my list of favorite desserts... Crispy and firm on the outside, while the inside is soft and moist. Delicious treat which is really easy to cook. And if you can't buy tvorog to make a cream, you can always change it to mascarpone.
